Ingredients
- 1 bag Kale about 300 g
- 1 small Lemon small (juice only)
- 3 small Avocado ripe and soft
- 1 Spring Onion
- 0.5 Tsp Sea Salt (or Himalayan)

Instructions
- Gather your ingredients and wash fresh produce. Wash your hands carefully as you will be massaging the salad multiple times by hand.
- Prepare the kale. Only use stalks segments in this salad that are juicy and tasty. Anything too fibrous, dry or hard can be saved for making a fresh juice, cooking a broth or possibly added to a cooked soup. Tear kale leaves into bite size.
- Use a large mixing bowl. Juice lemon and add salt and lemon juice both to the kale. Massage kale salt and lemon mix. This will make the leaves softer and easier to digest.
- Leave the kale mix rest and soften while getting the avocados prepared. Halve avocados and discard pit. Depending on your avocado variety, this method works great with Hass type avocados: carefully slice crosswise into the avocado to create small chunks, making sure not to puncture the skin or your hands. When I first tried out this method, I used a short blunt knife. Now any knife works for me.
- Add avocado cubes to kale mix. Use a spoon to scoop out if needed.
- Again, using your hands, massage the avocado into the kale till evenly coated.
- Chop up spring onion and add to salad. Add more spring onion to taste if you like.
- Serve salad and enjoy 🙂
